My first ever recipe formulation. An extract recipe that contains lots of dark LME, dark grains, cocoa powder and lactose. Jet black color, rich, thick, heavy, creamy and sweet all at once. An extract recipe that I didn’t like all that well, however my fiancé liked it. I plan to completely reformulate it for all grain and improve the concept—a beer that seduces you with a smooth, malty and rich nose and finishes with an extra sharp hop bite. My first ever all grain batch. Rich, malty and brown, lightly nutty, and tasty. Surprisingly, this is still one of my all time favorites and I’ve done a lot of all grain brews since. Made with around 9 pounds of honey and 9 or 10 pounds of grains. Started it in November and still haven’t bottled it. Last check it was around 9-10% alcohol and way too sweet for my taste. Now I’m just letting it sit…Recipe 009 American Pale Ale

I went into the basement where I store my grains, started with a base of pale malt, then just threw in whatever I thought looked good. Due to a mistake on a previous batch, I had some over-toasted 10L crystal that I put in there. It had been toasted in my oven, but too hot and too long. It gave the beer an interesting burnt flavor to it. The color was basically light brown. Overall flavor has been improving over time. It was OK at the start, now it’s pretty good.Recommended Kits
Oktoberfest/Marzen from Austin Homebrew Supply. This is an extract kit that turned out very, very good. Highly recommended.
